We have seen biscuits, cake, the famous bread week and now the amateur bakers will return to the tent to try and win a place in next week's round with their creative dessert skills.
The first challenge in Episode 4 will see bakers attempt to put their own spin on a Meringue Roulade. But how is it different to a Swiss roll cake and how can you make it at home?
What's the difference between a Roulade and Swiss roll?
A roulade and swiss roll look very similar - but a swiss roll is simply a type of roulade and not all roulades are swiss rolls. A swiss roll is always made up of cake being rolled with a filing, whereas a roulade can be rolled using other pastries or can even be savoury with a meat filling.
How can you make an easy Meringue Roulade at home?
If Bake Off has got you in the mood for some Sunday afternoon baking then we have a simple and easy recipe for you to enjoy a GBBO style roulade in under ten steps.
1. First, preheat your oven to 200C or Gas 6 and begin to line your tin.
2. Whisk all the egg whites with an electric mixer on full speed until very stiff.
3. Gradually add all the caster sugar keeping the mixer on a high speed until it is very stiff and glossy.
4. Spread the mixture into your tin and place it in the oven for about eight minutes, before lowering the temperature to 160C/Gas 3 and baking for a further 15 minutes.
5. Remove it from the oven and flip it over onto a sheet of non-stick baking paper. Remove the paper and let it cool for about 10 minutes.
6. Begin to whip the cream, mix in the yoghurt and spread over the meringue.
7. Grab your filling whether it be berries or chocolate and sprinkle over the mixture.
8. Now for the tricky bit! Begin to roll up the meringue, slowly but firmly using the paper for help ensuring you keep the roulade tight.
9. Sprinkle with icing sugar, nuts or a topping of your choice and enjoy!
If you were skilled enough to have no cracks then you definitely deserve a Hollywood handshake as this always proves to be a challenge in the Bake Off tent!

Swiss Rolls are generally made with a sweet sponge rolled with a sweet filling. A Roulade can be many things rolled with a filling, it could be a meringue roulade or gluten free cake roulade (See Here for my Chocolate & Peanut Butter Roulade) or even a savoury roulade with smoked salmon and cream cheese.

A roulade, like a braised dish, is often browned then covered with wine or stock and cooked. Such a roulade is commonly secured with a toothpick, metal skewer or a piece of string.
The terminology evolved in America for many years. From 1852 to 1877 such a dessert was called: Jelly Cake (1852), Roll Jelly Cake (1860), Swiss Roll (1872), Jelly Roll (1873), and Rolled Jelly Cake (1876). The name "Jelly Roll" was eventually adopted.
Roll cakes, also sometimes referred to as cake rolls or swiss rolls, are a sponge cake-like dessert that is rolled with fillings and it's often served with whipped cream.
That's because oil is liquid at room temperature so the sponge will stay flexible even when it cools down. Butter is firm at room temperature so when it cools it will harden and make the sponge more susceptible to cracking as you roll it.

Starting at the shorter edge of the cake, roll the cake and greaseproof paper up together, making sure that it is especially tight at the beginning. It's important that the cake is warm so it can set in the right shape. If it's too cold, it won't roll properly. Once rolled, leave it to cool completely.

For a traditional roulade, roll from the longer side. For my vertical roulade, roll from the shorter end. Let the roulade cool completely, rolled up in its own parchment, before filling and finishing.
Ho Hos are small, cylindrical, frosted, cream-filled chocolate snack cakes with a pinwheel design based on the Swiss roll. Made by Hostess Brands, they are similar to Yodels by Drake's and Swiss Cake Rolls by Little Debbie. Sold two or three per package, they contain about 120 calories per roll.
